I closed my last post on Lale Pide with this teaser:
“PS – There is one thing on the menu at Lale Pide that you can’t get anywhere else…but you’ll have to wait for my next post to see what it is!”
Well, the wait is over, here is the secret menu item that you cannot find anywhere else!
“Ballı Padişah Ekmeği” or Sultan Honey Bread is found nowhere else but here at Lale Pide. I asked Mustafa İyilikli, the owner, how long this dessert bread has been around thinking this was an ancient Turkish treat from the Ottoman Empire dating back to the 1500’s. Boy was I wrong! “30-40 years” he answered.
Since he is the only one who makes the tasty alternative to baklava, künefe or kadayif, I thought maybe he created it. Wrong again.
When he was a young boy baking bread in Nevşehir he had a master baker teach him the technique. But Mustafa told me that the bakers he learned from are not around anymore and those that know how to make it have stopped producing it. He said nobody serves it anymore because the ingredients are expensive and people prefer the inexpensive desserts.
Only one place in Cappadocia to find this delicious dessert.
That may well be the case, but personally, I think people have ceased making it because so many customers passed out in their restaurants due to the mind-blowing goodness they invited into their mouths!
Mustafa has since passed the hallowed secret recipe down to his son, Ahmet. I asked Ahmet who he was going to teach and he freely applied “to everybody who wants to learn.” So, here in a CaptivatingCappadocia.com exclusive; the making of “Ballı Padişah Ekmeği”…Enjoy!
